Ingredients
  

  • 16 oz coleslaw mix
  • 1 (3 oz) package ramen noodles, seasoning packet discarded
  • 1/2 cup sliced almonds
  • 3 green onions, sliced thin
  • 1 tbsp sesame seeds
  • 1/4 cup rice vinegar
  • 1/4 cup neutral oil
  • 2 tbsp soy sauce
  • 2 tbsp granulated sugar
  • 1 tsp toasted sesame oil
  • 1 tsp grated fresh ginger (optional)

Method
 

  1. Crumble the ramen noodles into a dry skillet with the sliced almonds. Toast over medium heat for 3 to 5 minutes, shaking often, until golden and fragrant. Transfer to a plate to cool.
  2. Whisk the rice vinegar, neutral oil, soy sauce, sugar, sesame oil, and ginger until the sugar dissolves.
  3. In a large bowl, combine the coleslaw mix, most of the green onions, and the cooled noodle-almond mixture. Toss lightly.
  4. Pour the dressing over the slaw and toss until everything is coated. Let it sit for 1 minute.
  5. Transfer to a serving bowl, sprinkle the reserved green onions and sesame seeds on top, and serve right away.

Notes

The ramen noodles will soften and lose their crunch as the salad sits, so this is best eaten within an hour of dressing. If you want to prep ahead, keep all the components separate and toss them together just before serving.
