Ingredients
  

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 3 scallions, thinly sliced
  • 2 tbsp toasted sesame seeds
  • 3 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tsp sugar
  • 2 tbsp neutral oil

Method
 

  1. Whisk the rice vinegar, soy sauce, sesame oil, ginger, garlic, sugar, and neutral oil in a large bowl until the sugar dissolves.
  2. Add the green cabbage, red cabbage, carrots, and most of the scallions. Toss until everything is evenly coated.
  3. Scatter the sesame seeds and remaining scallions on top. Serve right away or let it sit 10 minutes for the flavors to meld.

Notes

If you use a bagged coleslaw mix, the prep time drops to about 5 minutes. The slaw stays crisp for a few hours at room temperature, making it a reliable bring-along for potlucks.
