Ingredients
  

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup shelled edamame
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/3 cup sliced almonds or chopped peanuts
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tbsp neutral oil

Method
 

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until combined; stream in neutral oil while whisking.
  2. Shred cabbages and carrots, slice bell pepper, and chop green onions. Place in a large bowl with edamame and cilantro.
  3. Pour dressing over vegetables, toss to coat, then add almonds or peanuts and toss again. Let sit 5 minutes.
  4. Taste, adjust seasoning, and transfer to a serving bowl; top with extra green onions and sesame seeds.

Notes

This salad tastes even better after 10 minutes of resting, but you can serve it right away. If you want extra crunch, add the nuts just before serving.
