Arugula Pasta Salad Recipe

Ingredients
  

  • 8 oz farfalle pasta
  • 5 oz baby arugula
  • 1 cup cherry tomatoes, halved
  • ⅓ cup pine nuts
  • ⅓ cup shaved Parmesan cheese, plus more for serving
  • ¼ cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ½ tsp kosher salt, plus more for pasta water
  • ¼ tsp black pepper

Method
 

  1. Cook farfalle in salted boiling water until al dente, 8–10 minutes. Drain and rinse under cold water until cool.
  2. Toast pine nuts in a dry skillet over medium heat, shaking often, about 4 minutes until golden and fragrant. Transfer to a plate.
  3. Whisk lemon juice, mustard, honey, salt, and pepper in a small bowl. Slowly whisk in olive oil until emulsified.
  4. In a large bowl, combine cooled pasta, arugula, tomatoes, and most of the pine nuts. Drizzle with dressing and toss gently.
  5. Transfer to a serving platter, shave extra Parmesan over the top with a vegetable peeler, and scatter remaining pine nuts. Serve right away.

Notes

If making ahead, keep the dressed pasta, tomatoes, and pine nuts separate from the arugula. Toss everything together just before serving. The pasta can sit in the fridge, covered, for up to a day, but the salad is at its best within a few hours of being assembled.
