Ingredients
  

  • 12 oz rotini pasta
  • 1 cup marinated artichoke hearts, drained and quartered
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted kalamata olives, halved
  • ¼ cup thinly sliced red onion
  • ⅓ cup crumbled feta cheese
  • ¼ cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley or basil

Method
 

  1. Cook the pasta in salted boiling water until al dente, about 8 minutes. Drain and rinse under cold water until cool, then shake well to remove excess moisture.
  2. Whisk together the olive oil, lemon juice, mustard, garlic, oregano, salt, and pepper in a small bowl until emulsified, about 30 seconds.
  3. Toss the cooled pasta with the artichokes, tomatoes, olives, red onion, and feta. Pour the dressing over and mix until coated. Taste and add up to ¼ teaspoon more salt or a squeeze of lemon if needed.
  4. Fold in the fresh herbs. For the best flavor, let the salad sit on the counter for 10 minutes or refrigerate for at least 30 minutes before serving. Stir and finish with a drizzle of olive oil just before eating.

Notes

This salad tastes best after it sits for at least 30 minutes in the fridge; if you can wait overnight, the flavors really settle in. If you’re packing it for lunch, give it a quick stir and a squeeze of lemon right before eating.
