Applesauce Zucchini Bread Recipe

Ingredients
  

  • 1 cup shredded zucchini
  • ⅓ cup vegetable oil
  • ½ cup unsweetened applesauce
  • ¾ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup chopped walnuts (optional)

Method
 

  1. Whisk both sugars, eggs, oil, applesauce, and vanilla in a large bowl until smooth.
  2. Sprinkle the flour, baking soda, baking powder, salt, cinnamon, and nutmeg on top and stir the dry ingredients lightly together with a fork.
  3. Add the zucchini and walnuts, then fold with a spatula just until no dry flour remains.
  4. Pour into a greased 9×5-inch loaf pan and bake at 350°F (175°C) for 50 to 55 minutes, until a toothpick comes out with moist crumbs.
  5. Cool in the pan 10 minutes, turn out onto a rack to cool completely, then slice and serve.

Notes

If the top browns too quickly, tent a piece of foil over the loaf for the last 15 minutes. Let the bread cool at least 30 minutes before slicing to avoid a gummy texture.
