- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large bowl, whisk oil, brown sugar, eggs, and vanilla until smooth.
- Add flour, baking soda, cinnamon, salt, and nutmeg. Stir just until no dry flour streaks remain.
- Fold in grated apple and squeezed-dry zucchini until evenly distributed.
- Pour batter into the prepared pan and smooth the top. Bake 50 to 55 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
Notes
For the best texture, really wring out the zucchini after grating; too much liquid makes the loaf gummy. The bread develops a richer spice flavor overnight, so it’s a great make-ahead bake. If you don’t have brown sugar, the same amount of granulated sugar works, though the crust will be less crackly.
