Ingredients
  

  • 1 1/2 cups grated zucchini
  • 1 cup grated apple
  • 1/2 cup vegetable oil
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Pinch of ground nutmeg (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large bowl, whisk oil, brown sugar, eggs, and vanilla until smooth.
  2. Add flour, baking soda, cinnamon, salt, and nutmeg. Stir just until no dry flour streaks remain.
  3. Fold in grated apple and squeezed-dry zucchini until evenly distributed.
  4. Pour batter into the prepared pan and smooth the top. Bake 50 to 55 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  5. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

Notes

For the best texture, really wring out the zucchini after grating; too much liquid makes the loaf gummy. The bread develops a richer spice flavor overnight, so it’s a great make-ahead bake. If you don’t have brown sugar, the same amount of granulated sugar works, though the crust will be less crackly.
