Apple Quinoa Salad Recipe

Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 large crisp apple
  • 1 celery stalk
  • 2 tablespoons finely chopped red onion
  • 1/3 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper

Method
 

  1. Bring the water to a boil, add the quinoa and a pinch of salt, cover, and simmer for 15 minutes. Fluff and spread on a plate to cool completely.
  2. Whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper until smooth.
  3. Core and dice the apple, thinly slice the celery, and finely chop the red onion. In a large bowl, combine the cooled quinoa, apple, celery, onion, cranberries, and walnuts.
  4. Pour the dressing over the salad, toss to coat, then sprinkle with parsley and toss once more. Serve right away or let it sit for 10 minutes.

Notes

The cooling time for the quinoa is not counted in the prep time but only takes about 15 minutes. If you are making this for meal prep, keep the dressing separate and add it each day so the apple stays crisp.
