- Preheat oven to 400°F (200°C). Cut 4-inch rounds from tortillas. Mix granulated sugar and cinnamon. Brush both sides of each round with melted butter, coat in cinnamon sugar, and drape over inverted muffin tin cups.
- Bake shells 8 to 10 minutes until golden and crisp. Cool on the pan a couple of minutes, then transfer to a rack.
- Melt 2 tbsp butter in a skillet over medium heat. Add diced apples, brown sugar, lemon juice, and a pinch of salt. Cook 5 minutes until apples soften. Stir in vanilla and cornstarch slurry, cook 1 to 2 minutes until thickened.
- Spoon warm filling into cooled shells, top with whipped cream or ice cream, and serve right away.
Notes
If your tortillas are stiff, microwave them for about 15 seconds to make them pliable before cutting.
