Ingredients
  

  • 2 large apples, peeled and diced small (about 3 cups)
  • 2 tbsp unsalted butter, divided
  • 3 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp all-purpose flour or cornstarch
  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1 1/4 cups milk
  • 1 tsp vanilla extract
  • 1 tbsp melted butter, cooled slightly

Method
 

  1. Melt 1 tbsp butter in a skillet over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and 1 tbsp flour. Cook 6 to 8 minutes until apples soften and mixture thickens.
  2. Whisk the 1 1/2 cups flour, granulated sugar, baking powder, baking soda, and salt in a large bowl. Separately whisk egg, milk, vanilla, and 1 tbsp melted butter. Stir wet into dry until just combined; batter will be lumpy. Let rest 5 minutes.
  3. Clean the skillet and set over medium heat. Melt a little butter, then pour 1/4 cup batter per pancake. Cook 3 to 4 minutes until bubbles form, flip, and cook 2 to 3 minutes more. Repeat with remaining batter.
  4. Stack pancakes on plates, spoon warm apple mixture on top, and serve with butter and maple syrup.

Notes

The apple topping can be made a day ahead and quickly reheated. Pancake batter is best used right away, but if you must hold it, keep it covered in the fridge for up to an hour and give it a few gentle stirs before cooking.
