Ingredients
  

  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup unsalted butter, melted and cooled slightly
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 2 cups peeled and finely chopped apples

Method
 

  1. In a small bowl, stir together 1/2 cup flour, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon. Rub in cold butter until crumbly. Chill while preparing batter.
  2. Preheat oven to 400°F (200°C) and line a 12-cup muffin tin. Whisk 2 cups flour, baking powder, baking soda, salt, remaining cinnamon, and nutmeg. In another bowl, whisk melted butter, both sugars, eggs, vanilla, and milk. Combine wet and dry until just mixed.
  3. Fold in apples with a few strokes.
  4. Divide batter among cups, top generously with streusel, pressing lightly to adhere.
  5. Bake 20 to 22 minutes until golden and a toothpick comes out clean. Cool in pan 5 minutes, then transfer to a wire rack and serve warm.

Notes

Let the muffins cool in the pan for 5 minutes so the streusel sets before moving them. They taste best the day they are baked, but you can reheat leftovers in a 350°F oven to restore some crunch.
