- In a small bowl, stir together 1/2 cup flour, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon. Rub in cold butter until crumbly. Chill while preparing batter.
- Preheat oven to 400°F (200°C) and line a 12-cup muffin tin. Whisk 2 cups flour, baking powder, baking soda, salt, remaining cinnamon, and nutmeg. In another bowl, whisk melted butter, both sugars, eggs, vanilla, and milk. Combine wet and dry until just mixed.
- Fold in apples with a few strokes.
- Divide batter among cups, top generously with streusel, pressing lightly to adhere.
- Bake 20 to 22 minutes until golden and a toothpick comes out clean. Cool in pan 5 minutes, then transfer to a wire rack and serve warm.
Notes
Let the muffins cool in the pan for 5 minutes so the streusel sets before moving them. They taste best the day they are baked, but you can reheat leftovers in a 350°F oven to restore some crunch.
