Method
- Cook the apples, butter, brown sugar, cinnamon, and salt over medium heat for 5 minutes until softened. Stir in the cornstarch slurry and cook 1 minute, then cool for 10 minutes.
- Lay an egg roll wrapper as a diamond, spoon 2 tbsp filling in the center, and moisten the edges with water.
- Fold the bottom corner up, fold in the sides, and roll up tightly, pressing the top corner to seal. Repeat for all 8 rolls.
- Heat oil to 350°F (175°C), fry rolls in batches for 2 to 3 minutes until golden brown, and drain on paper towels. Toss warm rolls in the cinnamon sugar and serve right away.
Notes
The lemon juice is optional but adds a nice bright note; if you skip it, add a splash of water to the cornstarch slurry instead. Let the filling cool fully before rolling so the wrapper stays crisp.
