Apple Pie Cheesecake Bars Recipe

Ingredients
  

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour, plus 2 tbsp
  • 1/3 cup granulated sugar (for crust)
  • 1/4 tsp fine sea salt
  • 8 oz full-fat cream cheese, room temperature
  • 1 large egg, room temperature
  • 1/4 cup granulated sugar (for cheesecake)
  • 1 tsp vanilla extract
  • 3 medium apples, peeled and diced 1/2-inch
  • 3 tbsp brown sugar, packed
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • Pinch ground nutmeg, optional
  • 1/4 cup all-purpose flour (for crumble)
  • 3 tbsp brown sugar (for crumble)
  • 3 tbsp cold butter, cubed (for crumble)
  • 3 tbsp old-fashioned oats

Method
 

  1. Heat oven to 350°F. Line 8-inch square pan with parchment. Mix 1 cup flour, 1/3 cup sugar, salt, and melted butter; press into pan. Bake 15 min until edges are golden.
  2. Beat cream cheese, 1/4 cup sugar, egg, and vanilla until smooth; set aside.
  3. Cook apples, 3 tbsp brown sugar, cinnamon, nutmeg, lemon juice over medium heat 8 min. Stir in 2 tbsp flour; cook 1 min. Cool slightly.
  4. Mix 1/4 cup flour, 3 tbsp brown sugar, cold butter, and oats into crumbly topping. Pour cheesecake filling over crust, spoon apple mixture on top, scatter crumble. Bake 30-35 min until set and golden.
  5. Cool pan on rack 1 hour, then refrigerate at least 3 hours. Lift out, slice into 16 squares.

Notes

These bars need time in the fridge to firm up before slicing, so plan to make them the day before or the morning of. The 70-minute total time covers hands-on work and oven time but not the chilling; that's extra.
