Apple Pie Bars Recipe

Ingredients
  

  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp fine sea salt
  • 6 medium apples (about 2.5 lbs), peeled, cored, and thinly sliced
  • 1/2 cup packed light brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp fresh lemon juice
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp fine sea salt
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup old-fashioned rolled oats
  • 1/2 tsp ground cinnamon
  • 1/2 cup cold unsalted butter, cubed

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment. Pulse crust flour, sugar, and salt. Add cold butter and pulse to damp crumbs. Press firmly into pan. Bake 15 to 18 minutes until pale gold at the edges.
  2. Toss sliced apples with brown sugar, 2 tbsp flour, lemon juice, cinnamon, nutmeg, and salt. Let sit 5 minutes.
  3. Combine crumble flour, brown sugar, oats, and cinnamon. Cut in cold butter until pea-sized clumps form. Keep cold.
  4. Spoon apples over the warm crust and press lightly. Scatter crumble over the top. Bake 30 to 35 minutes until bubbling and deep golden.
  5. Cool completely in the pan on a rack. Lift out with parchment, slice into 12 squares, and serve.

Notes

Let the bars cool all the way to room temperature before slicing; this helps the filling set and keeps the squares neat. If you prefer them warm, reheat individual pieces in a 300°F (150°C) oven for a few minutes.
