Apple Pie Baked Beans Recipe

Ingredients
  

  • 6 slices bacon, chopped (divided)
  • 1 medium yellow onion, diced
  • 2 (28 oz) cans baked beans, undrained
  • 2 large apples, peeled, cored, and diced
  • ½ cup brown sugar, packed
  • ¼ cup ketchup
  • 2 tbsp molasses
  • 2 tbsp apple cider vinegar
  • ½ cup apple cider or apple juice
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Cook bacon in a skillet over medium heat until crisp, about 6 minutes. Transfer to a paper towel-lined plate, then sauté onion in the bacon fat until softened, about 4 minutes.
  2. In a bowl, whisk together brown sugar, ketchup, molasses, vinegar, apple cider, cinnamon, nutmeg, salt, and pepper until smooth.
  3. Add baked beans, apples, and all but 2 tablespoons of the bacon to a 6-quart slow cooker. Pour the sauce over and stir gently to combine.
  4. Cover and cook on low for 4 to 5 hours until thick and bubbly. Ladle into a serving dish and top with the reserved bacon.

Notes

For extra-thick beans, remove the lid during the last 30 minutes and stir once or twice. If your apples release a lot of liquid, you can add an extra tablespoon of brown sugar when you first check the pot.
