- Cook bacon in a skillet over medium heat until crisp, about 6 minutes. Transfer to a paper towel-lined plate, then sauté onion in the bacon fat until softened, about 4 minutes.
- In a bowl, whisk together brown sugar, ketchup, molasses, vinegar, apple cider, cinnamon, nutmeg, salt, and pepper until smooth.
- Add baked beans, apples, and all but 2 tablespoons of the bacon to a 6-quart slow cooker. Pour the sauce over and stir gently to combine.
- Cover and cook on low for 4 to 5 hours until thick and bubbly. Ladle into a serving dish and top with the reserved bacon.
Notes
For extra-thick beans, remove the lid during the last 30 minutes and stir once or twice. If your apples release a lot of liquid, you can add an extra tablespoon of brown sugar when you first check the pot.
