Ingredients

  • 1 unbaked 9-inch pie crust, homemade or store-bought
  • 2 ½ lbs apples (about 5 to 6 medium)
  • ¾ cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp kosher salt
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup pecan halves
  • ½ cup packed light brown sugar
  • ¼ cup heavy cream
  • 3 tbsp unsalted butter
  • 1 tbsp light corn syrup or honey
  • Pinch of salt

Method

  1. Preheat oven to 400°F with rack in lower third. Fit crust into a 9-inch pie plate, crimp edges, and refrigerate.
  2. Toss sliced apples with granulated sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla. Let sit 10 minutes.
  3. Simmer brown sugar, cream, butter, and salt for 2 minutes, then fold in pecans.
  4. Spoon apples into the crust, then pour the pecan mixture evenly on top.
  5. Bake 10 minutes at 400°F, then reduce to 350°F and bake 40 to 45 minutes until bubbly and golden.
  6. Cool on a rack at least 1 hour, then slice and serve.

Notes

The pie needs that hour of cooling to set, so plan to have it out of the oven before dinner if you want it ready for dessert. A baking sheet under the pie plate catches any caramel drips and saves your oven floor.
