Method
- Stir together the diced apples, sugar, flour, cinnamon, nutmeg, and salt. Let the mixture sit for 10 minutes, stirring once.
- On a lightly floured surface, roll each pie crust to smooth creases and cut out 4 circles per crust (8 total) using a 4-inch cutter.
- Spoon about 1 tablespoon of filling into the center of each circle. Moisten the edges with water, fold into a half-moon, and crimp with a fork. Cut 2 small vents on top.
- Brush the pies with beaten egg and sprinkle with the cinnamon-sugar. Bake at 400°F (200°C) for 18 to 20 minutes, until deep golden.
- Cool on the baking sheet for at least 10 minutes, dust with more cinnamon sugar if desired, and serve.
Notes
If the apples release a lot of liquid after macerating, drain most of it before filling the pies. Store any leftovers in the fridge and reheat in the oven to crisp the crust again. Cooling time is not included in the prep or cook time.
