Ingredients

  • 1 refrigerated pie crust (from a 14-oz box)
  • 3 medium Granny Smith apples, peeled and sliced 1/4 inch thick
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 cup heavy cream, at room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • Ground nutmeg, for sprinkling

Method

  1. Preheat oven to 375°F (190°C) and fit the pie crust into a 9-inch pie plate, crimping the edges. Freeze 10 minutes.
  2. Layer the apple slices evenly in the crust, overlapping loosely.
  3. Whisk sugar, eggs, heavy cream, vanilla, flour, and salt until smooth. Pour over the apples and sprinkle nutmeg on top.
  4. Bake 50 to 55 minutes until the center trembles slightly when shaken. Cool on a wire rack at least 2 hours before slicing.
  5. Slice and serve at room temperature or chilled.

Notes

If your crust edges brown too quickly, tent them with foil partway through baking. I find that a glass pie dish gives the most even heat and the prettiest golden bottom.
