Apple Cucumber Salad Recipe

Ingredients
  

  • 2 crisp apples, like Granny Smith or Honeycrisp
  • 1 English cucumber
  • 1/4 small red onion
  • 2 tbsp chopped fresh dill
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper

Method
 

  1. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper until the honey dissolves, about 30 seconds. Set aside.
  2. Core the apples and cut them into thin half-moons, about 1/4 inch thick. Slice the cucumber crosswise into rounds of the same thickness. Thinly slice the red onion into half-rings. This slicing takes about 5 minutes total.
  3. Place the apples, cucumber, onion, and dill in a large bowl. Pour the dressing over and toss gently for about 1 minute until everything is coated. Taste and adjust with salt or lemon juice. Serve right away or chill up to 30 minutes before eating.

Notes

The salad tastes best the day it is made, but you can refrigerate it for a day or two. The apples will soften slightly and release some juice, so stir again before serving. If you are not a fan of raw onion, soak the slices in cold water for 10 minutes and drain them before adding to the bowl.
