Ingredients
  

  • 4 cups shredded green cabbage (about ½ small head)
  • 1 cup shredded red cabbage
  • 1 large crisp apple (Granny Smith or Honeycrisp), cut into matchsticks
  • 1 medium carrot, shredded or cut into thin matchsticks
  • ⅓ cup plain Greek yogurt (full-fat or 2%)
  • 2 tbsp mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • ½ tsp celery seed
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. Whisk the yogurt, mayo, vinegar, honey, Dijon, celery seed, salt, and pepper until smooth and set aside.
  2. Toss the green cabbage, red cabbage, apple, and carrot in a large bowl to combine.
  3. Pour the dressing over the vegetables and toss until evenly coated. Pile into a serving bowl and serve.

Notes

A short rest on the counter, about 10 minutes, lets the dressing soak into the cabbage a bit, but the slaw is at its crunchiest within the first 2 hours. If making ahead, store the dressing and vegetables separately and toss right before serving.
