- Mix the crumble topping: combine flour, brown sugar, and cinnamon. Rub in cold butter until pea-sized clumps form. Refrigerate.
- Whisk together the 2 cups flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
- In another bowl, whisk eggs, sugars, oil, buttermilk, and vanilla until smooth.
- Pour wet into dry, fold until just combined, then gently fold in diced apples.
- Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with liners. Divide batter among cups, top with crumble, and bake 18 to 20 minutes. Cool in pan 5 minutes, then transfer to a rack.
- Unmold and serve warm, with butter if you like.
Notes
If you do not have buttermilk, stir 1½ teaspoons lemon juice or vinegar into ½ cup milk and let it sit for 5 minutes. The batter will be thick, and filling the cups nearly to the top helps create tall muffin domes. Allow the muffins to cool for at least 5 minutes in the pan before moving them, or the tender crumb may tear.
