Apple Cinnamon Muffins Recipe

Ingredients
  

  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs, room temperature
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • ½ cup (120ml) neutral oil
  • ½ cup (120ml) buttermilk, room temperature
  • 1 tsp vanilla extract
  • 1½ cups (180g) diced apple (¼-inch cubes)
  • ¼ cup (55g) cold unsalted butter, cubed
  • ½ cup (60g) all-purpose flour (for crumble)
  • ¼ cup (50g) light brown sugar, packed (for crumble)
  • ½ tsp ground cinnamon (for crumble)

Method
 

  1. Mix the crumble topping: combine flour, brown sugar, and cinnamon. Rub in cold butter until pea-sized clumps form. Refrigerate.
  2. Whisk together the 2 cups flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. In another bowl, whisk eggs, sugars, oil, buttermilk, and vanilla until smooth.
  4. Pour wet into dry, fold until just combined, then gently fold in diced apples.
  5. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with liners. Divide batter among cups, top with crumble, and bake 18 to 20 minutes. Cool in pan 5 minutes, then transfer to a rack.
  6. Unmold and serve warm, with butter if you like.

Notes

If you do not have buttermilk, stir 1½ teaspoons lemon juice or vinegar into ½ cup milk and let it sit for 5 minutes. The batter will be thick, and filling the cups nearly to the top helps create tall muffin domes. Allow the muffins to cool for at least 5 minutes in the pan before moving them, or the tender crumb may tear.
