- Whisk flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
- In a separate bowl, whisk melted butter and sugar, then eggs, vanilla, and buttermilk until smooth.
- Pour wet ingredients into dry and stir gently just until combined, leaving the batter lumpy.
- Fold in the diced apple with a few strokes.
- Scoop batter into a lined 12-cup muffin pan, sprinkle with coarse sugar if desired, and bake at 400°F for 18 to 22 minutes.
- Cool in the pan 5 minutes, then transfer to a wire rack and serve warm.
Notes
No buttermilk on hand? Stir 1 tbsp lemon juice or white vinegar into 1 cup milk and let it sit for 5 minutes. The batter benefits from a 5-minute rest before baking but don’t let it sit longer than 10 minutes, or the leaveners start losing steam.
