Apple Cinnamon Muffins Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla extract
  • 1 cup buttermilk, at room temperature
  • 1 1/2 cups peeled and finely diced apple (about 2 medium)
  • Coarse sugar for the tops (optional)

Method
 

  1. Whisk flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
  2. In a separate bowl, whisk melted butter and sugar, then eggs, vanilla, and buttermilk until smooth.
  3. Pour wet ingredients into dry and stir gently just until combined, leaving the batter lumpy.
  4. Fold in the diced apple with a few strokes.
  5. Scoop batter into a lined 12-cup muffin pan, sprinkle with coarse sugar if desired, and bake at 400°F for 18 to 22 minutes.
  6. Cool in the pan 5 minutes, then transfer to a wire rack and serve warm.

Notes

No buttermilk on hand? Stir 1 tbsp lemon juice or white vinegar into 1 cup milk and let it sit for 5 minutes. The batter benefits from a 5-minute rest before baking but don’t let it sit longer than 10 minutes, or the leaveners start losing steam.
