- Preheat oven to 350°F (175°C) and grease an 8x8 inch baking dish. In a large bowl, whisk the eggs, maple syrup, milk, melted butter, and vanilla until smooth.
- Add the oats, baking powder, cinnamon, and salt to the bowl. Stir just until combined and no dry spots remain.
- Fold in the chopped apples and any nuts or dried fruit until evenly distributed. The batter will be loose.
- Pour into the prepared dish and spread level. Bake 35 to 40 minutes, until the center is set and a toothpick comes out with a few moist crumbs. Let cool in the pan 10 minutes.
- Slice into 6 squares, lift out with a spatula, and serve warm.
Notes
If you prefer a sweeter oatmeal, drizzle the top with 1 extra tablespoon of maple syrup before baking or sprinkle with a little brown sugar. Letting it rest after baking is key for neat slices; cutting too soon can make the squares crumble.
