Apple Cheesecake Bars Recipe

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups diced apples
  • 2 tbsp brown sugar
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp lemon juice
  • ⅓ cup all-purpose flour
  • ¼ cup old-fashioned oats
  • ¼ cup brown sugar
  • 3 tbsp unsalted butter, melted

Method
 

  1. Heat oven to 350°F. Mix crust ingredients and press into a lined 8-inch pan. Bake 10 minutes, then cool slightly.
  2. Beat cream cheese and ⅓ cup sugar until smooth. Add egg and vanilla, mix just until combined.
  3. Toss apples with brown sugar, 1 tbsp flour, ½ tsp cinnamon, and lemon juice.
  4. Make streusel by mixing remaining flour, oats, brown sugar, cinnamon, and butter. Pour cheesecake over crust, top with apples, then streusel. Bake 35 to 40 minutes.
  5. Cool completely, chill 3 hours, then slice and serve cold.

Notes

The bars need at least 3 hours of chilling to set cleanly, but overnight is even better. If your pan is glass, reduce the oven temperature by 25°F and check a little earlier.
