Apple Blueberry Crisp Recipe

Ingredients
  

  • 4 medium apples (about 1.5 lbs), peeled, cored, and sliced ¼ inch thick
  • 2 cups blueberries, fresh or frozen
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg (optional)
  • pinch of salt
  • ¾ cup rolled oats
  • ¾ cup all-purpose flour
  • ½ cup unsalted butter, cold, cubed
  • ¾ cup brown sugar

Method
 

  1. Heat oven to 375°F (190°C). Toss apples, blueberries, granulated sugar, ¼ cup brown sugar, cornstarch, lemon juice, cinnamon, nutmeg (if using), and salt in a large bowl.
  2. In another bowl, combine ¾ cup brown sugar, oats, flour, cinnamon, and salt. Cut in cold butter with fingertips or a pastry blender until the mixture resembles coarse crumbs with small butter bits.
  3. Pour fruit mixture into an 8-inch square baking dish (or 9-inch pie plate). Spread topping evenly over the fruit and place the dish on a baking sheet. Bake for 45-50 minutes until filling is bubbling thickly and topping is deep golden.
  4. Cool on a wire rack for at least 15 minutes before serving. Spoon into bowls and top with ice cream or cream.

Notes

Cool for at least 15 minutes so the filling sets and doesn’t run. If using frozen blueberries, do not thaw; they may release a little more juice, so an extra teaspoon of cornstarch can help. The unbaked crisp can be assembled, covered, and refrigerated up to 4 hours; bake from cold, adding about 5 minutes.
