- Preheat oven to 375°F (190°C). In a large bowl, stir together oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk eggs, then whisk in milk, melted butter, brown sugar, and vanilla until smooth.
- Peel and core apples, chop into 1/2-inch pieces. Butter an 8-inch square baking dish, spread apples in bottom.
- Pour wet mixture into dry ingredients, fold together, then spoon batter over apples and spread evenly.
- Bake 35 to 40 minutes until puffed and golden and center is set. Cool 5 minutes, then slice and serve warm.
Notes
Letting the oatmeal rest for those 5 minutes after baking makes a big difference, it sets up just enough to cut clean squares. If you bake it the night before, cool completely before covering and refrigerating. Reheated squares taste almost as fresh as day one.
