Ingredients
  

  • 2 cups fermented idli or dosa batter
  • 1/4 cup finely chopped red onion
  • 1 to 2 green chilies, finely chopped
  • 1 tbsp grated fresh ginger
  • 2 tbsp finely chopped fresh curry leaves
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • 2 to 3 tbsp neutral oil
  • Optional: 2 tbsp grated carrot or finely chopped coriander

Method
 

  1. Temper mustard seeds, cumin seeds, and hing in 1 tsp oil over medium heat. Add curry leaves and green chilies, cook 30 seconds, then cool.
  2. Mix the cooled tempering with the idli batter, onion, ginger, and optional carrot. Stir well and adjust salt. Thin with water if needed to reach a thick, pourable consistency.
  3. Heat the appe pan over medium heat for 2 minutes. Drip a few drops of oil into each mould.
  4. Spoon batter into the moulds, filling them three-quarters full. Cook 2 to 3 minutes until the bottoms are golden and the tops set.
  5. Flip each appe with a skewer or spoon and cook the other side for 2 to 3 minutes until golden all over. Serve hot with chutney or sambar.

Notes

If you’re using freshly homemade unsalted batter, add a teaspoon of salt when you mix everything together. Letting the batter rest for 10 minutes after adding the tempering allows the flavours to meld before cooking.
