- Cook bacon until crisp, sauté onion and bell pepper in 2 tbsp drippings until softened.
- Whisk eggs, milk, salt, and pepper until smooth.
- Layer hash browns in a greased 9x13-inch dish, top with bacon, veggies, and 1½ cups cheese; pour egg mixture over.
- Bake at 350°F for 45 to 55 minutes, until center is set and top is golden.
- Rest 5 minutes, sprinkle remaining cheese, slice, and serve.
Notes
If you make this ahead and refrigerate overnight, add 5 to 10 minutes to the bake time. Let the dish sit at room temperature while the oven preheats to reduce the chill.
