Method
- Mix flour, 1 tsp salt, and 1 tbsp oil. Add warm water gradually, knead 5 minutes until smooth, cover, and rest 20 minutes.
- Combine mashed potato, green chili, ginger, cumin, coriander, amchur, ½ tsp salt, and cilantro. Mix well, taste, and adjust.
- Divide dough into 6 balls, flatten each into a cup, place 2 tbsp filling inside, seal completely, and press flat.
- Roll each stuffed ball gently on a floured surface to a 7–8 inch round, about ⅛ inch thick.
- Cook on a medium-hot tawa for 1 minute per side. Brush with ghee, flip, and cook 1–2 minutes more, pressing edges, until crisp and golden.
- Serve hot with a pat of butter, yogurt, and pickle.
Notes
The dough needs 20 minutes of resting time, not counted in the active prep above. If the potato filling feels loose, stir in a teaspoon of dry flour before stuffing.
