Aloo Paratha Recipe

Ingredients
  

  • 2 cups whole wheat flour (atta)
  • 1 tsp salt
  • ¾ cup warm water
  • 1 tbsp oil
  • 3 medium potatoes (about 1 lb), boiled, peeled, and mashed
  • 1–2 green chilies, finely chopped
  • 1 tsp grated fresh ginger
  • 1 tsp cumin seeds, lightly crushed
  • 1 tsp coriander powder
  • ½ tsp amchur (dry mango powder)
  • ½ tsp salt, for filling
  • ¼ cup fresh cilantro, finely chopped
  • Ghee or oil, for cooking

Method
 

  1. Mix flour, 1 tsp salt, and 1 tbsp oil. Add warm water gradually, knead 5 minutes until smooth, cover, and rest 20 minutes.
  2. Combine mashed potato, green chili, ginger, cumin, coriander, amchur, ½ tsp salt, and cilantro. Mix well, taste, and adjust.
  3. Divide dough into 6 balls, flatten each into a cup, place 2 tbsp filling inside, seal completely, and press flat.
  4. Roll each stuffed ball gently on a floured surface to a 7–8 inch round, about ⅛ inch thick.
  5. Cook on a medium-hot tawa for 1 minute per side. Brush with ghee, flip, and cook 1–2 minutes more, pressing edges, until crisp and golden.
  6. Serve hot with a pat of butter, yogurt, and pickle.

Notes

The dough needs 20 minutes of resting time, not counted in the active prep above. If the potato filling feels loose, stir in a teaspoon of dry flour before stuffing.
