Ingredients
  

  • 1 cup unsweetened almond milk
  • 3 tbsp chia seeds
  • 2 tsp maple syrup
  • 1/2 tsp vanilla extract

Method
 

  1. In a bowl or jar, whisk together the 1 cup almond milk, 3 tbsp chia seeds, 2 tsp maple syrup, and 1/2 tsp vanilla until well combined.
  2. Let sit at room temperature for 10 minutes, then stir again. Cover and refrigerate at least 2 hours or overnight.
  3. Stir one last time, spoon into a bowl, and add fresh berries, nut butter, or coconut. Serve cold.

Notes

For the best texture, give the pudding a stir after its first 10 minutes of soaking. It needs at least 2 hours in the fridge to fully set; overnight gives you the thickest, creamiest result.
