- Beat the butter and sugar with a mixer on medium speed until light and fluffy, about 2 minutes.
- Add the egg and vanilla, mix on low for 30 seconds until combined. The batter may look curdled.
- Fold in the almond flour, baking powder, and salt with a spatula until no dry pockets remain. The dough will be soft and slightly tacky.
- Preheat oven to 350°F. Scoop 1 1/2-tablespoon balls of dough onto parchment-lined sheets, flatten slightly, and bake for 10 to 12 minutes until edges are golden. Cool on the sheet 5 minutes, then transfer to a rack.
Notes
If the dough feels too sticky to handle, chill it for 10 minutes. These cookies are naturally gluten-free. For the best texture, let them cool completely on a wire rack before stacking.
