Ingredients
  

  • 1 cup (100 g) blanched almond flour
  • 1/2 cup (128 g) creamy natural peanut butter
  • 1/2 cup (80 g) coconut sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of fine sea salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Stir peanut butter, coconut sugar, egg, and vanilla in a large bowl until smooth.
  2. Add almond flour, baking soda, and salt. Stir until a soft dough forms.
  3. Scoop 12 equal portions, roll into balls, place on the sheet, and press with a fork to make a crosshatch.
  4. Bake 10 to 12 minutes, until edges are golden and centers look slightly underdone.
  5. Cool on the sheet 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

If your peanut butter is very thick, warm it for 10 seconds in the microwave before mixing so it combines easily. The cookies firm up as they cool, so do not move them off the baking sheet too soon.
