Almond Flour Oatmeal Cookies Recipe

Ingredients
  

  • 2 cups (200 g) fine blanched almond flour
  • 1 cup (90 g) old-fashioned rolled oats
  • 1/2 cup (100 g) packed light brown sugar or coconut sugar
  • 1/4 cup (57 g) unsalted butter, melted and cooled slightly
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup (85 g) dark chocolate chips or chopped chocolate

Method
 

  1. Whisk almond flour, oats, baking soda, and salt in a large bowl. Stir in the chocolate chips.
  2. In a small bowl, whisk melted butter, brown sugar, egg, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and stir just until combined. Cover and chill the dough for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C). Scoop 2-tablespoon dough balls onto a parchment-lined sheet, spacing them 2 inches apart. Bake 10 to 12 minutes, until edges are golden and centers look soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

The dough needs to chill for at least 30 minutes before baking, which is not counted in the prep time. If your kitchen is warm, you can scoop the dough into balls first, then chill them on the sheet pan before baking.
