- Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment. Mash the 3 bananas in a large bowl until mostly smooth.
- Whisk in the 3 eggs, ¼ cup maple syrup, ¼ cup melted coconut oil, and 1 teaspoon vanilla until uniform and a little frothy.
- Add the 2 cups almond flour, 1 teaspoon baking soda, ½ teaspoon cinnamon, and ¼ teaspoon salt. Fold gently until no dry spots remain, then fold in the walnuts if using.
- Scrape the batter into the pan, smooth the top, and bake 45 to 55 minutes until a toothpick comes out clean.
- Cool in the pan 10 minutes, lift out by the parchment, and cool 10 more minutes on a rack. Slice and serve warm.
Notes
For the cleanest slices, let the loaf cool completely before cutting. Very ripe bananas with lots of brown spots will give you the sweetest, most tender bread. If your almond flour has been in the fridge, let it come to room temperature so it mixes in smoothly.
