Ingredients
  

  • 8 oz dried fettuccine
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 4 oz full-fat cream cheese, softened
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • Pinch of nutmeg (optional)
  • ½ cup reserved pasta water, plus more as needed

Method
 

  1. Cook fettuccine in salted water according to package directions. Before draining, reserve ½ cup of the pasta water, then drain.
  2. Melt butter in a large skillet over medium heat. Add garlic and cook for 1 minute, until fragrant.
  3. Add cream cheese and stir until completely melted and smooth. Pour in heavy cream, bring to a gentle simmer, and cook 3 to 4 minutes, stirring often, until slightly thickened.
  4. Reduce heat to low. Stir in Parmesan, salt, pepper, and nutmeg. Continue stirring for about 2 minutes, until the sauce is glossy.
  5. Add drained pasta to the skillet. Toss to coat, adding reserved pasta water a little at a time until the sauce reaches your preferred consistency. Serve right away with extra Parmesan.

Notes

For the smoothest sauce, grate your own Parmesan and avoid boiling after the cheese is added. Start the pasta water first so everything finishes at the same time.
