- Boil ravioli in salted water 1 minute less than package directs. Reserve 1/2 cup pasta water, then drain.
- In the same pot, melt butter and cook garlic until fragrant. Add cream and simmer until slightly thickened. Remove from heat and whisk in Parmesan, salt, pepper, and nutmeg.
- Fold ravioli into the sauce, adding pasta water a tablespoon at a time if needed to loosen.
- Transfer to a 2-quart baking dish, top with mozzarella, and broil until golden and bubbly, about 3 to 4 minutes. Let rest briefly before serving.
Notes
Undercook the ravioli in step 1 on purpose; it finishes cooking in the sauce and keeps its shape better. The dish is best served right away while the cheese is molten, so have your plates ready before you pull it from the broiler.
