Ingredients
  

  • 2 medium zucchini (about 1 lb total)
  • 1/2 tsp salt, plus more for salting and finishing
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • Olive oil cooking spray or avocado oil spray

Method
 

  1. Slice zucchini into 1/2-inch sticks, toss with salt, and let sit 10 minutes. Pat completely dry.
  2. Place flour in one shallow bowl, eggs in a second, and mix panko, Parmesan, garlic powder, 1/2 tsp salt, and pepper in a third. Line them up.
  3. Dredge each stick in flour, dip in egg, then press firmly into the panko mixture to coat all sides.
  4. Preheat air fryer to 400°F (200°C). Arrange coated zucchini in a single layer, spritz with oil, and cook 8 to 10 minutes, flipping halfway and spraying again, until golden and crisp.
  5. Pile on a plate, sprinkle with salt, and serve immediately with warm marinara or ranch.

Notes

The salting step takes about 10 minutes, so factor that into your prep. If you skip it, the fries will still work but will have a softer bite. Work in batches so the basket never gets crowded.
