Ingredients
  

  • 2 medium zucchini
  • 1 tbsp olive oil
  • 2 tbsp cornstarch
  • ½ tsp kosher salt, plus more for finishing
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ cup finely grated parmesan (optional)

Method
 

  1. Preheat the air fryer to 400°F. Wash and trim the zucchini, slice into even ¼‑inch rounds, and pat very dry.
  2. Toss the dry rounds with the olive oil. Whisk together the cornstarch, salt, pepper, garlic powder, and parmesan if using, then toss the mixture with the oiled zucchini until every piece is coated.
  3. Arrange the chips in the air fryer basket in a single layer, working in batches if needed.
  4. Cook at 400°F for 8 to 10 minutes, flipping halfway, until deep golden and crisp at the edges.
  5. Transfer to a plate immediately, sprinkle with a little extra salt, and serve hot.

Notes

These chips lose their crunch fast, so serve them right away. The parmesan is optional but adds a deep savory note and helps the coating crisp even more. If you want to skip the parmesan, the chips are still crisp and fully dairy‑free.
