Ingredients

  • 1 whole chicken, 4 to 5 lbs
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 lemon, halved
  • 4 sprigs fresh thyme or rosemary (optional)

Method

  1. Pat the chicken dry, then rub all over with a mix of olive oil, salt, pepper, garlic powder, and paprika, working some under the skin.
  2. Squeeze the lemon inside the cavity, tuck in herbs, tie the legs together, and fold wing tips under.
  3. Preheat the air fryer to 360°F. Place the chicken breast side down and cook 25 minutes. Flip breast side up and cook 25 to 35 minutes more, until the thickest thigh reads 165°F.
  4. Rest the chicken on a cutting board for 10 minutes, then carve and spoon any juices over the top.

Notes

Letting the chicken rest is not counted in the cook time, but it’s worth the wait. If you salted the bird an hour ahead and left it uncovered in the fridge, the skin will be even drier and crispier.
