- Peel the sweet potatoes, cut them into ¼-inch sticks, and pat very dry with a towel.
- Toss the fries in a bowl with the oil, cornstarch, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Preheat the air fryer to 400°F. Arrange fries in a single layer, cook for 10 to 12 minutes, shaking halfway, until golden and crisp.
- Transfer to a plate, sprinkle with flaky salt, and serve immediately.
Notes
Soaking the cut fries in cold water for 30 minutes and drying them thoroughly before seasoning will give you an even crispier result. The cornstarch coating does most of the heavy lifting, so don’t leave it out.
