Method
- Halve the squash lengthwise and scoop out the seeds and stringy bits.
- Brush the cut sides with the olive oil, season with salt and pepper, and place cut-side down in the air fryer basket. Cook at 370°F for 15 minutes.
- Flip the halves cut-side up, then cook another 5 to 8 minutes until a fork pierces the thickest part easily.
- Let the squash cool for 5 minutes, then scrape the flesh with a fork into strands. Taste, adjust salt, and serve.
Notes
Let the squash rest a few minutes after cooking so it is easier to handle. This recipe makes a great make-ahead base for meal prep; store the plain strands and reheat with sauce another night.
