Ingredients

  • 14 oz canned salmon, drained
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp finely chopped fresh parsley or dill (optional)
  • Cooking spray or neutral oil for misting

Method

  1. Preheat air fryer to 400°F. In a bowl, combine salmon, panko, egg, mayo, Dijon, lemon juice, onion powder, garlic powder, salt, pepper, and parsley. Stir gently until mixed.
  2. Divide into 8 portions, shape into 1/2-inch-thick patties, and place on a plate.
  3. Mist both sides with spray, arrange in a single layer in the air fryer basket, and cook 5 minutes. Flip and cook 4 to 5 minutes more until golden and crisp.
  4. Serve immediately with lemon wedges or your favorite sauce.

Notes

If you start with fresh salmon, cook and flake it first and let it cool before mixing. The uncooked patties freeze well: shape them, freeze on a tray, then transfer to a bag and cook straight from frozen, adding 3 to 4 extra minutes.
