Air Fryer Roast Beef Recipe

Ingredients
  

  • 2 lb beef roast (eye of round or top sirloin)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, garlic, Dijon mustard, smoked paprika, rosemary, thyme, salt, and pepper to make a thick paste.
  2. Pat the roast dry and rub the paste all over. Let it sit at room temperature for 15 minutes while the air fryer preheats to 400°F (200°C).
  3. Place the beef in the air fryer basket and cook for 25 minutes, flipping halfway, until the internal temperature reaches 125°F (52°C) for medium-rare.
  4. Move the roast to a cutting board and rest for 10 minutes. Slice thinly against the grain and serve.

Notes

Rub the paste on the beef up to 24 hours ahead and refrigerate it, covered. Bring the roast to room temperature before air frying. A meat thermometer is the most reliable way to hit your doneness — aim to pull the beef about 5°F below your target because the temperature will climb as it rests.
