- Let steaks sit at room temperature 30 minutes, pat dry, rub with oil, and season both sides with salt, pepper, and garlic powder. Preheat air fryer to 400°F (200°C).
- Place steaks in the basket in a single layer and cook 4 to 5 minutes until deeply browned.
- Flip each steak, top with 1 tbsp butter and a herb sprig, and cook 3 to 5 minutes more, until the internal temperature reaches 130°F to 135°F (54°C to 57°C) for medium-rare.
- Rest steaks on a cutting board for 5 minutes, then slice against the grain and spoon any pan juices over the top.
Notes
The 30‑minute rest at room temperature is hands‑off but makes a big difference for even cooking. You can let the steaks sit out while you prep sides and preheat the air fryer. The butter will brown a little in the basket, and that’s fine, those drippings add flavor.
