Ingredients

  • 1 sheet refrigerated pie crust (half a 14-ounce box)
  • 2 large eggs
  • ½ cup heavy cream
  • ¼ tsp kosher salt
  • Pinch black pepper
  • ¼ cup shredded gruyère
  • ⅓ cup diced cooked ham
  • ¼ cup fresh baby spinach, roughly chopped

Method

  1. Preheat the air fryer to 350°F (175°C). Press the pie crust into a 6-inch metal cake pan, trim the edges to a ½-inch overhang, and prick the bottom with a fork.
  2. Whisk the eggs, heavy cream, salt, and pepper until smooth. Scatter the cheese, ham, and spinach over the crust, then pour the custard on top.
  3. Place the pan in the air fryer and cook for 15 to 18 minutes, until the top is puffed and the center is set with just a slight jiggle.
  4. Let the quiche rest for 5 minutes in the pan, then run a knife around the edge, remove, and slice to serve warm.

Notes

If your air fryer basket is on the small side, check that the 6-inch pan fits before you start. A set of two 4-ounce ramekins works just as well and bakes a minute or two faster. Leftover quiche reheats beautifully and makes a great next-day lunch.
