Air Fryer Potato Wedges Recipe

Ingredients

  • 2 large russet potatoes (about 1 ½ lb / 680 g)
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp fine sea salt
  • ½ tsp black pepper

Method

  1. Cut each potato into 8 wedges. Soak in cold water for 10 to 30 minutes, then drain, rinse, and pat completely dry.
  2. Toss the dried wedges with the olive oil, then sprinkle over the cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
  3. Arrange the wedges in a single layer in the air fryer basket. Cook at 400°F (200°C) for 10 minutes, flip each wedge, and cook another 8 to 10 minutes until deeply golden and crisp.
  4. Sprinkle with extra salt if desired and serve immediately while piping hot.

Notes

The cold‑water soak is not counted in prep time; it adds 10 to 30 minutes of hands‑off waiting but is worth the fluffier interior. Drying the wedges thoroughly before oiling is the single most important step for crunch. If your air fryer runs hot, check the wedges a couple of minutes early.
