Air Fryer Meatloaf Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup finely diced onion
  • 2 garlic cloves, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar

Method
 

  1. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce. Mix gently until just combined.
  2. Shape the mixture into a loaf about 6 inches long and 3 inches wide on a piece of parchment.
  3. In a small bowl, whisk together the ketchup, brown sugar, and vinegar until smooth.
  4. Preheat the air fryer to 375°F (190°C). Place the loaf in the basket and cook for 10 minutes. Brush with half the glaze, then cook another 10 to 12 minutes until the internal temperature reaches 160°F (71°C).
  5. Rest the meatloaf in the basket for 5 minutes, then slice and serve.

Notes

A parchment sling makes lifting the meatloaf out of the basket effortless. The 5-minute rest is not optional; slicing early will cause the loaf to break apart.
