Air Fryer Granola Recipe

Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup raw mixed nuts, roughly chopped
  • 1/4 cup pumpkin seeds or sunflower seeds
  • 1/4 cup melted coconut oil or neutral oil
  • 1/3 cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 cup dried cranberries or chopped dried apricots (optional)

Method
 

  1. Combine the oats, nuts, seeds, cinnamon, and salt in a large bowl.
  2. In a separate bowl, whisk the oil, maple syrup, and vanilla until smooth.
  3. Pour the wet mixture over the dry and stir with a spatula until evenly coated.
  4. Preheat the air fryer to 300°F (150°C). Spread the granola in the basket, press down, and air fry for 5 minutes. Stir gently, press down again, and air fry 3 to 5 minutes more until golden.
  5. Cool completely in the basket, then break into clusters and stir in dried fruit if using.

Notes

The granola will feel soft hot but firm up as it cools. If adding dried fruit, always stir it in after cooling to prevent burning. For the largest clusters, press the mixture down firmly and avoid stirring after the initial bake.
