- Slice chicken breasts in half horizontally to make 4 thin cutlets. Pound each to an even 1/2-inch thickness between plastic wrap.
- Beat the eggs in a shallow bowl. Put flour in a second dish. In a third dish, combine breadcrumbs, Parmesan, garlic powder, salt, and pepper. Dredge each cutlet in flour, then egg, then breadcrumb mixture, pressing firmly.
- Preheat air fryer to 400°F. Arrange cutlets in a single layer, spray tops with oil, and cook 5 minutes. Flip, spray again, and cook 5 to 7 minutes more until golden and 160°F inside.
- Spoon marinara over each cutlet, top with mozzarella, and air fry 2 to 3 minutes at 400°F until melted and bubbling. Serve immediately.
Notes
If your air fryer basket is small, cook the cutlets in two batches so the air can circulate around each one. Keep the first batch warm in a low oven while you finish the second.
