- Cut chicken into roughly 1-inch pieces and pat dry.
- Whisk eggs, buttermilk, garlic powder, onion powder, paprika, salt, and pepper in a shallow bowl.
- Set up flour (seasoned with salt and pepper) and panko in separate shallow bowls. Dredge chicken in flour, then egg wash, then panko, pressing to adhere.
- Preheat air fryer to 400°F (200°C). Spray basket with oil. Arrange nuggets in a single layer, spray tops with oil, and cook 8 to 10 minutes, flipping halfway through.
- Transfer to a plate, sprinkle with flaky salt, and serve immediately with dipping sauces.
Notes
Let the breaded nuggets rest on a wire rack for 5 minutes before cooking for better coating adhesion. For extra crunchy edges, spritz the panko lightly with oil right before they go into the basket. If your air fryer runs hot, check at 7 minutes and reduce the temperature by 25°F.
